Meals for a month.

Tonight, I worked late and then came home and made a shopping list. On the menu this month, I'm doing 2 old stand-bys and a new dish. After I had my list, I went to WalMart to get my groceries. Unfortunately, WalMart doesn't have the foil cooking pans that I use, so I had to stop at Kroger on the way home.
First up, macaroni and cheese with broccoli.

After I mix everything and split it out into as many loaf-pans as I can, I mark some foil with what it is and how long to cook it with what temperature. So, for example, I marked the mac & cheese with "M&C 30/350". Then, it goes into the freezer packed tight cause there's lots to go in there!

Next, it was time to take care of the chicken dishes. I bought a huge pack of chicken for $9.50. I think it was almost 5 lbs. I took two of the breasts and cut them into chunks for making my chicken parmisean. Meals for a month I took the other two breasts and fried them so that I could cut them into cubes for the new dish. Meals for a month While that was cooking, I coated the chunks of chicken with bread crumbs and divided them into their little pans. Then, those went into the freezer.

By the time I was done with the chicken parm, it was time to work on the chicken enchiladas. Meals for a month Mmmmmm looking good! Then, I divide them up and stuff them into the freezer, too! Meals for a month Meals for a month

Tonight's productivity resulted in 11 mac & cheese, 10 chicken parm, and 10 enchilada servings. All that for under $50! And, when combined with a couple of pizzas and some hamburger patties that I've already got in the freezer, that's a month's worth of food for Bubbles and me.

The only things I forgot were
  • I forgot to put the yellow pepper into the chicken enchilada mix. No biggie.
  • Some cheese for on top of the enchiladas. But, I can add that when I cook them.
  • I forgot to eat dinner.

    I munched on some pepperoni, cheese, crackers, pretzels & spinach dip and then I ate a salad. Now, it's 11pm and I'm ready for bed!

    I should take lessons from you. We eat lunch out and then have a sandwich for "dinner". Neither of us is starving or are we eating right. But we are old and just don't care, I guess. I am proud of you and what you do.

    I am also proud of SAH and what he has taught himself to do on the computer. He has even posted pictures!!
