Cooking for the month

Time to cook for the month again. This time, I'm doing to tried and true favorites, with a bit of a twist. First, the Parmesan Chicken. Start with 3 pounds of chicken cut into bite-size chunks Cooking for the month Scramble some eggs with salt and pepper Cooking for the monthCooking for the month And some Italian flavored bread crumbs. Cooking for the month This time, I sprayed the tins with some cooking spray (Olive oil spray!) Cooking for the month There, you have my full assembly line Cooking for the month Once all of the chicken pieces are coated with the egg and bread crumb mixture Cooking for the month I add some butter to aid with browning the chicken when it cooks Cooking for the month and then, I top it with grated Parmesan cheese Cooking for the month. That's it for the chicken parm. Of course, I cover them with foil and then put them in the freezer.

Moving on to the other standard - with a twist this time. I started with some sauteed onions, then added milk and flour Cooking for the month The twist this time was that I bought whole-wheat elbows this time. They certainly have a lot more flavor than the standard ones Cooking for the month Nothing new here! Plenty of broccoli Cooking for the month I typically use three or 4 different flavors of cheese. this time, I went with mild cheddar, Colby and Monterey jack, and mozzarella Cooking for the month Once the milk/onion/flour mixture was heated and slightly thickened, I added the cheese Cooking for the month Then, when the cheese is all melted, I pour it all together and mix it thoroughly Cooking for the month The pans are all spread out and I fill them one by one with a big spoon Cooking for the monthCooking for the month Covered, labeled and ready for the freezer Cooking for the month

That was all last night. Tonight, I cooked some salmon for dinner and I have enough left for some lunches or dinners. I had no idea salmon was so expensive. I paid $9.95 per pound for a couple of center-cut steaks. Cooking for the month I kept it simple, this time since I've never really done anything with fish in the past. Just some simple seasonings and baked in the oven for 20 minutes at 400. Cooking for the month I thought it looked pretty good right away Cooking for the month The true test was the taste. I cut each steak in half and added one of the pieces to a plate with some salad Cooking for the month I was right. It was delicious. I think it might have been a little under cooked, but it was still delicious.

Now, on to experimental dish number two. It's meatloaf! I've done meatloaf before, but this is a new recipe. Mixed in a big bowl onion and eggs Cooking for the month Add butter flavored crackers Cooking for the month Add some grated Parmesan cheese Cooking for the month Then, realize that you've doubled the recipe and the bowl you're working in just won't be big enough, so transfer the ingredients to a bigger bowl Cooking for the month and add some seasonings. Then, add equal parts ground mild Italian sausage and ground beef Cooking for the month Brace yourself... your hands are going to get COLD! Cooking for the month There's a sauce to go with this recipe. It's ketchup, brown sugar, Worcestershire sauce and salt and pepper Cooking for the month Mix well Cooking for the month. You might need to use a spoon and smoosh the chunks of brown sugar, like I did. Once the loaves are spread among the many baking tins Cooking for the month You can add the sauce on top Cooking for the month As you can see, I left little butt-cracks for the sauce to rest in. Then, for good measure, I added some more cheese to the top Cooking for the month I put the remaining sauce into a little bowl for keeping in the fridge until we eat the meatloaf. Then, I can add it as needed, if needed Cooking for the month

There you have it. One month's worth of dinners!

Total cost, about one hundred dollars. To think those silly congressmen had problems with the food-stamp challenge where they were to live on $7.00 per day for a month. Ha! I would eat like a king for that much money!

You have no idea how proud of you I am. All the dishes look so good. All you need now is a couple of bottles of white wine to go with the chicken and a red to go with the meat loaf. Yummy!

Quite the snow storm! We thought by the weather maps we saw that it would miss you all together.

I really need to cook before I run out of food. That way, I can have more variety in the freezer.

I do still have one of the chicken enchilada and some breakfast burritos in there from last time. With the 54 dishes that I made in the past 2 days, I'd say I'm in pretty good shape.

We got quite the wintery mix of ice and snow overnight. There's about 1/2 inch of ice under the 4 inches of snow.


On the bright side, I'm planning on meeting Ryan for some after-work snowkiting at MBSP. Unfortunately, the wind doesn't seem to be willing to cooperate. We'll see.
