Chicken Pot Pies

Sunday night, I made homemade chicken pot pies. I haven't tried them yet but they sure look delicious! I was able to assemble 11 pies with
  • 3 boneless/skinless chicken breast halves
  • 4 carrots
  • 1 bag of frozen peas
  • 1 large baking potato
  • 1 medium onion
  • 1 can of chicken broth
  • 3 packages of Kroger buttermilk biscuits (8 biscuits per pkg)
    I'm thinking that next time I'll add some additional veggies. Perhaps some celery and some peppers (yellow/red/orange). We'll see. It'll depend on how these taste.

    Last night, Taz was kind enough to help me get my seat bar welded into place on my bike. I have been having problems with the seat slipping back into the sleeve about an inch and a half during each of my rides. Since I'm not planning on getting any taller, I figured it was safe to weld that sucker in there so that I don't have to worry about it any more. I had a nice visit with him and SIL after we got back. Thanks again, Taz! It worked great. I got in a 10 mile ride in the basement last night and the seat didn't budge. Chicken Pot Pies

    TAZ- My heart aches with pain for all your extended family is going through. Having lost a son, I know how much pain your mom-in-law is going through. We both send our love and prayers at this very sad time. MA

    It ended up being well worth the trip!

    Ryan showed up about 20 minutes after I got there and he pumped up his new 13 meter Fuel. It felt like there was enough wind to get wet, so I pumped up my 17 meter Menace. We were on the water for about an hour. The water didn't seem that cold, either. The only part of me that got cold was my feet.

    I really needed that session!
    Friday is looking even better!

    Looks like a low cal meal and one that I love and thank you no Lima beans. Your mom made a similar dish that was a meal for two and used a bisquick type crust that was great, I'm sure that yours will taste super.
