Pie In a Jar
2010-04-11
I've been wanting to try this since I saw the recipe online a few months ago. They looked like they'd be fun to make and fun to eat. I saw some canning jars at Walmart last weekened, so I bought a couple of boxes. I hadn't checked out the specific shape of the jars suggested in the recipe and I ended up buying something different than what was suggested. I also bought some canned pie filling while I was there. On Saturday morning, while waiting for the wind to fill in (It eventually did Session 1 Session 2,) I decided to start with an attempt at making the dough. It turned out pretty well Pie in a jar from what I could tell. Not wanting to make something less than awesome, I decided to make a trip to Kroger and see if I could pick up some canning jars described in the recipe. While I was there, I decided to grab some Granny Smith apples and do the whole thing the right way. Pie in a jar I don't have a fancy apple peeler slicer like this one Pie in a jar So I did it my own way. First, I sliced the apple with my handy-dandy slicer tool Pie in a jar Pie in a jar and then I peeled each individual slice Pie in a jarPie in a jar. Finally, I cut the slices into little cubes Pie in a jar.

Then, I mixed the dry ingredients Pie in a jar Pie in a jar Pie in a jar Pie in a jar Pie in a jar Pie in a jar and poured the mixture over the cut apples and tossed them well Pie in a jar Pie in a jar Pie in a jar

I rolled out a small amount of the dough and cut the tops for the mini pies Pie in a jar. The next step was to line the jars with the remaining dough. I wasn't sure I had enough, but I did... barely Pie in a jar. They really looked awesome once I had the filling inside Pie in a jar. Slits cut in the top crust to release the steam and lids applied, they went into the freezer Pie in a jar Pie in a jar. I will eat one tonight after my bike ride and let you know how they taste. To bake them, you remove the lids and put them in cold oven. Then, you cook at 375 for 55-60 minutes.

We had a nice weekend which ended with some thunder storms (mild) and rain - probably 2+ inches. I think both north and south of us got more severe storms as there was lots of lightening in both directions, first north an then south. We enjoyed seeing it all from our porch.

My only excuse is that I drink very heavily these days!!! Not to mention the severe dementia!

El Duque has a shunt bypassing the liver and thus is not functioning as it should. A surgery could be done but we don't have $5000 so we are trying a different route of milkweed tabs and vitamin E to see if that may help. Keep your good thoughts coming please. We hope we are doing the right thing but right now, it is the only thing that makes sense.

Little Duke has a liver problem. He had to have blood drawn 2 weeks ago before his neutering which discovered an elevated liver enzyme (normal level is 105); his was 400+ so he was on antibiotics for 2 weeks. This was rechecked again yesterday and the level is now over 900! We are so very concerned. He is going in today for some more testing and I will keep you informed on the outcome. Please send prayers or angles or just get better wishes - PLEASE!

Screw you, YouTube. If you don't want me to upload a video longer than 10 minutes, then make it so that I can't. Don't waste 2 hours of my upload time and make me believe that it uploaded ok.

Feh.

I think the cook time might be sufficient at 45 to 50 minutes with the taller jars like I used. The pie tasted awesome. The trio of Arabic coffee, ice cream, and the pie-in-a-jar made for a most excellent dessert.

New cribbage scores to the left. I know this is going to change my lead but I have to be fair to POPS. He is getting discouraged. Who can blame him?
